According to latest research one of the most valuable sources of the multidirectional phytochemicals is broccoli sprouts. Young sprouts contain many bioactive, health-promoting compounds. They have been recognized as a rich source of versatile biologically active compounds such as flavonoids, polyphenols, glucosinolates and other endogenous metabolites with documented anticancer activity and other preventive prosperities to modern disease.
Therefore, Pure Food Norway AS has developed a new process for the production
of nutrition rich concentrate based on broccoli sprouts and other important plants. Special attention is focused to the preserving of phytochemicals, polyphenols, antioxidants and glucosinolates (mainly sulforaphane). Pure Food’s products are suitable to boost a nutritional value of wide range of food products.
The best way to increase consumption of healthy foods is incorporation into widespread foods such as bread, knekkebrød, juices, soups etc. Therefore, Pure Food Norway has been developing wide range of food products extremely rich in nutrients.
One of the first outcome of the development is knekkebrød with chia seeds enriched with broccoli sprouts.
